ANZAC COOKIES

Seeing that I enjoyed baking, my ex-colleague, a foreign exchange trader, emailed her mom in New Zealand to get the recipe for the famous anzac cookies. They were famous for being nutritious and keeping well for the Australian and New Zealand armies. I have since then experimented with different ingredients and amounts until I got an even healthier variation. Today I brought them for my chain-smoking internet technologist friend - hoping somehow these health nuggets would neutralise the effect of nicotine.

2 oz white flour (1/4 cup)
3 oz sugar (no need actually)
1 tea cup flaked coconut
1 tea cup rolled oats
2 oz butter (1/4 cup)
1 Tablespoon Golden Syrup
half teaspoon baking soda
2 Tablespoons boiling water

Mix together flour, sugar, coconut, and rolled oats. Melt butter and golden syrup. Dissolve soda in the boiling water and add to butter and golden syrup. Make a well in the centre of the flour mixture, then stir in the hot liquid. Place in spoonfuls on cold greased trays. Bake 10-20 minutes in a pre-heated oven at 350 degrees F (= 180 Celsius). Variations: substitute parts of rolled oats for wheat germ or other healthy goodies.

.Note: a normal measuring cup is about 8 oz
